Recipe 1: Crème Anglaise (French Vanilla Sauce)

Ingredients:

  • 12 egg yolks
  • 1 cup sugar
  • 1 quart heavy whipping cream
  • 1 teaspoon vanilla extract
  • Dash of cinnamon powder (optional)

Method:

  1. In a mixing bowl, whisk egg yolks and sugar until thick, light in color, and smooth.
  2. Heat cream and vanilla in a saucepan until almost boiling.
  3. Slowly pour ¾ of the hot cream into the egg mixture while whisking vigorously to temper the eggs.
  4. Return the mixture to the remaining cream in the saucepan.
  5. Cook over low heat, stirring continuously with a rubber spatula, until the sauce thickens and coats the back of a spoon.
  6. Add a dash of cinnamon powder for extra flavor.
  7. Cool slightly before serving. Perfect for drizzling over cakes, fruit, or pastries.

Recipe 2: White and Dark Chocolate Bread Pudding

Ingredients:

  • 12 whole eggs
  • 2 quarts half-and-half
  • 1 quart whipping cream
  • 4 cups granulated sugar
  • 2 tablespoons vanilla extract
  • 3 loaves white bread
  • 4 cups white chocolate chips
  • 4 cups semi-sweet dark chocolate chips

Method:

  1. In a large mixing bowl, whisk together eggs, half-and-half, whipping cream, sugar, and vanilla until well combined.
  2. Tear bread into large pieces and add to the wet mixture.
  3. Add both white and dark chocolate chips, mixing gently to coat the bread.
  4. Preheat oven to 350°F. Spray a full-size hotel pan (or large baking dish) with nonstick spray.
  5. Pour mixture into the pan, cover with foil, and bake for 45 minutes.
  6. Remove foil and bake for an additional 15 minutes until golden and set.
  7. Serve warm with vanilla sauce, chocolate drizzle, whipped cream, and fresh berries for garnish.
